Busy Mom's version of Mexican Meatballs




If you are a true Beauties fan you would have noticed I didn’t post last month. I had just gotten a new part time job after having my second child Landon. I am hoping for the best of both worlds! Between finding childcare and adjusting to the new schedule, I wasn’t cooking much. This month was still a challenge as I get home past 7 pm. But I thought my contribution to the Mexican Meatballs this month is to give you a review on my favorite store-Costco. Sometimes I can shop there and not even go to the regular store.

I used the chicken based, hormone free, yada yada, meatballs in the refrigerator section. I believe they even added spinach and some cheese, which has to be healthy! I cooked them on the stove top with the canned tomatoes, cumin, garlic, and hot pepper. I threw them onto the fancy bakery bread (from Costco) and everyone seemed happy. I think they were just happy that mom was happy after a glass of wine and only 15 minutes in the kitchen.

Not bad after fighting the Costco crowds on Memorial Day weekend with two young children!

  2. Jols - I'm impressed, Costco is also my favorite store, but sometimes I just can't handle the crowds! But you nailed a good dinner in 15 minutes, that's awesome! I've never tried their chicken meatballs - will add that to the list for the next time I go. And I agree, a glass of wine makes everything better!
