April Recipe: Au Gratin Potatoes

I am back in civilization!!!  Woo hoo!   I am also in charge of the April recipe and will even have a kitchen to cook it in (hopefully).  My snowy Wyoming adventure is over, and I am currently deciding my fate so stay tuned to where I will end up next.  In the meantime, Easter is the 24th of this month and if I'm lucky I'll be spending it with my family in Washington. Our traditional Easter dinner is ham and scalloped potatoes. And honestly I don't love ham, but nothing beats scalloped potatoes! 

So for the April recipe I decided to try a new twist on an old favorite. My family went to Ireland a couple of years ago and they raved about the potatoes they had there. This is my Aunt Donna's recipe to recreate the Irish version. The recipe below will be the perfect addition to Easter dinner! 

Irish Au Gratin Potatoes 
5 medium russet potatoes
1 1/2 c. heavy cream
1/3 c. milk
1 1/2 Tbl. flour
1 clove garlic, pressed
1/2 tsp salt
1/4 tsp white pepper
1 Tbl butter, softened
1 cup Irish cheddar and 1 cup Gruyere
1 tsp finely chopped parsley
Preheat oven to 400 degrees. Cut potatoes into 1/4" slices and quarter the slices. Set aside.In bowl, mix the cream, milk, flour, garlic, salt, and white pepper. (I modified by mixing the cheeses in with this). Set aside.Coak 9x13" pan with softened butter. Arrange 1/3 of the potatoes in the dish and top with some of the cream mixture. Repeat this 2 more times, ending with cream mixture on top. Cover with foil and bake at 400 degrees for 20 min. then uncover and bake an additional 40 min. Sprinkle with additional cheese if desired. Sprinkle parsley on top and serve.

  2. I'm with you, ham is okay, but really it's just an excuse to have scalloped potatoes! I've already picked up a block of Irish cheddar and can't wait to try this version! Thank you aunt Donna for sharing your recipe!

  5. I haven't but that sounds yummy. Also, you guys are crazy about the ham. I love ham. And I love Easter because it means I get to eat ham.

  7. I have made scalloped potatoes with a combination of white and sweet potatoes, they are great! I also mash them together all the time and everyone seems to love them too!

    I have scalloped kolrabi with parmesan...wonderful!
