Thirsty Thursday: The Fresh Mango Sweet Escape


I bought a box of mangos at Costco to make mango, black bean, poblano pepper quesadillas (they’re delicious by the way). Then I used some of the mangos to make a winter slaw salad. But after that I still had  7 mangos left to consume!


So what’s a girl to do who has too many mangos?

Make a Sweet Escape Cocktail! Now this isn’t tequila based and I’ll be 100% transparent, it wasn’t as good as a tequila cocktail, but it did make us feel like we were in Hawaii… at least for a few minutes!

The Sweet Escape
1 ounce fresh mango puree – made with fresh mango* 
1 1/2 ounce vodka 
1 ounce fresh lemon juice** 
1 ounce simple syrup *** 
2 ounces chilled soda water 
Mango slices (fan) & lemon spiral for garnish
In a mixing glass add fresh mango puree, vodka, fresh lemon juice and simple syrup; add ice and shake until well blended. Strain into a ice filled Collins glass and spritz with chilled soda water. Garnish with a fan of mango slices and a spiral of lemon.
* Fresh Mango Puree: One medium-sized mango = 1 cup diced = 1/2 cup puree. 
** Fresh Lemon Juice: 1 medium-sized lemon = approx 2 ounces juice 
*** Simple Syrup: Mix a 1:1 ratio of water to sugar; bring water to a boil, add sugar to dissolve, and cool.

  1. Yum! This drink feels like summer. As for the mangoes, juice them! Okay, really I don't know other than making some good superfood smoothies with them. Or salsa.

  2. Yummy, this sounds like summer to me. I don't have a good mango recipe for you. Mango salsa for fish or a mango crumble for dessert are Michelle's suggestion.

  6. Oooohh, I am making these for sure! Wild Ginger's Mango Daquiri's are my favorite drink ever. Now I can make them at home.
