I have been following the Beauties since the beginning and have enjoyed all the posts and recipes. So when my sister, Megan, and her bestie Emily asked if I would be willing to provide this week's Thirsty Thursday entry - I jumped at the chance. Thanks Beauties!
As a kid, I would secretly take a spoonful of frozen lime Daiquiri my Mom would occasionally have in the freezer after inviting the neighborhood ladies over. This probably explains to this day my love for both a) alcohol and b) daiquiri ice from Baskin Robbins. In that spirit, I decided to feature a really great Adult Grapefruit Slushy. I tried a recipe similar to this last August at a fabulous restaurant in Portland, OR called Mothers Bistro. They actually had a Slurpee machine on site, but since (unfortunately) I don't have one of those I made some modifications so we could all make it at home.
The ingredient list is simple:
-- Absolute Ruby Red Vodka
-- Grapefruit juice
-- Simple syrup
-- Fresh lime
-- Ice cream maker
Per the instructions of your ice cream maker, pre-freeze the ice cream container. Once the container is appropriately chilled, you can add the slushy ingredients directly to it:
1 cup vodka
3 cups grapefruit juice
3 tablespoons simple syrup (I used Trader Joe's premade syrup, but you can easily make this - it is equal parts water and sugar boiled together and cooled)
1 lime, squeezed
Give it a quick stir, and turn the ice cream maker on. In about 30 minutes or so, your slush will be ready.
You should feel free to play with the proportions but be a bit careful with the amount of alcohol - because alcohol doesn't freeze, if you use too much you won't have a slush form. Also, you can adjust the amount of simple syrup to your taste. I added a small amount to just take a bit of the edge of the grapefruit juice. A too sweet drink usually means you won't want more than one - and trust me, you will want more than one of these!
(If you don't have an ice cream maker, you could try this in the blender too - it will be more like a daiquiri or frozen margarita, but still a tasty blended cocktail.)
I rimmed a martini glass with some refined sugar, to add a bit of extra sweetness and prettiness. I piled a generous amount of frozen slushy into that glass, and garnished with a sprig of mint. Any leftovers (although there probably won't be) can be stored in a covered container in the freezer. It will stay in slush form (it will harden a bit, but will quickly melt once served), so this could also be made in advance.
