Pink Beauty Margarita


Since this lovely cocktail is currently the face of our facebook page I figured I better share the recipe. It’s officially called a Papi Delicious and originated from Poppy restaurant in Seattle. This is my dad’s version and one of his signature cocktails, so we call it the Dougie Delicious. But for the purposes of Beauties and the Feast, I think Pink Beauty is an appropriate name.

Don’t let the pretty color fool you – this is one serious cocktail with a spicy bite, and just the ticket to keeping the six beauties happy!

Pink Beauty Margarita (adapted from Poppy’s Papi Delicious)

Ingredients:
Lime juice
Red Bell Pepper
Jalapeno Pepper
Mint
Hornitos (silver) tequila
Curacao
Ice

For the rimmer:
Sugar
Smoked Paprika
Lime Zest
Pinch of salt

The Flair:
Red bell pepper, sliced

Directions:

Make the rimmer by combining equal amounts of sugar and smoked paprika with lime zest and a pinch of salt. (This smoky rimmer is also excellent with Bloody Mary's!)

Rim each glass with lime juice and dip in the rimmer

Muddle lime juice (1/2 lime) with red bell pepper, mint & slice of jalapeno pepper
Add tequila and Curacao
Shake with ice
Strain into the rimmed martini glass

Float a slice of red bell pepper on top
